Local owner and operator Scott Jennings says it’s all about the steaks! From the thick gorgeous prime cuts of steaks to the Colorado casual atmosphere to the finest of whiskeys and the sweetest of decadent desserts, it’s time for you to step inside this whiskey-themed steakhouse.
Situated on the North end of Old Town, The Still Whiskey Steaks sets the pace for dining and drinking excellence. The distinct warm log cabin feel along with the flannel-clad, knowledgeable wait staff set the tone for this Colorado vibe steakhouse. You get fancy steakhouse quality without the high prices, white tablecloths, and tuxedoed waiters.
The servers greet regulars by name, and there’s no doubt that when you come back they will know your name too. There is an energy here every night, revved by a polished staff that are confident that they can make regulars of everyone! And as for the dress code… what dress code? You will receive the same warm welcome whether you are wearing blue jeans or a tie and a jacket. So come as you are, and bring your friends.
As the name infers – The Still Whiskey Steaks – it’s all about whiskey and steaks, combining the 2 things that people have been enjoying for centuries- great whiskey and great steaks! When you marinate great cuts of steak with award winning locally distilled corn whiskey (5003 Distillery), you get steaks that truly deserve their own plate.
This Fort Collins’ Colorado casual eatery defines the carnivore’s dream. The meaty, delicious and satisfying steaks originate from Gold Canyon Natural Reserve and are certified gourmet Angus beef. Each steak is unique as they are hand cut in house with an abundance of marbling for flavor. A secret whiskey marinate, whiskey sauces and taste profiles are all proprietary. The steak tips appetizer is a local favorite, which uses the tips from the filets, and strips cut in house. The most popular cut is the ribeye that comes in 12oz and 16oz cuts. The flavorful NY strip, perfectly prepared filet, and juicy prime rib are a close second – you can’t go wrong with any of them.
They obviously hang their hat on their steaks, but also have a great selection of non-beef options including delicious Brick chicken, Colorado lamb, Colorado trout, lobster, crab Legs, salmon and even a vegan Portobello entrée that will make a meat eater drool. A nice selection of amazing salads are available for a lighter option. Anyone who walks into the restaurant can have a great meal, and an enjoyable experience regardless of their appetite or dietary needs.
A happy ending awaits in the addictive desserts. House made brownies served in a skillet, seasonal hot, fresh cobbler with luscious vanilla ice-cream, bread pudding and other weekly dessert specials keep the selection fresh as well as diverse.
Regulars nestle up to the bar to converse with the lively and fun bartenders, watch great sports games on TV’s while enjoying tasty steak tips, or scrumptious steamed mussels, just a few of our favorite appetizers. The Still Whiskey Steaks offers barrel aged Manhattan flights, a list of over 40 Colorado whiskeys, a rotating selection of Colorado draft beer, as well as wine and specialty cocktails.
Happy hour is Mon-Fri 3-6pm, and Sat-Sun 11am-5pm.
The upstairs private balcony overlooks the dining room and is a great place to host your party, business event, or dinner reception. It can accommodate up to 55 patrons. A banquet menu or buffet options are also available. Inquire for more information.
