Providing an atmosphere that is friendly and inviting with a refreshingly genuine hospitality, Metro features exceptional service that is warm and engaging. Encompassing 3 different levels, this hip eclectic restaurant offers impromptu social gathering space on the entry level, followed by a short walk up the stairs (handicap accessible) to the main dining area with a mix of high and low top tables, cozy seating areas and a full bar. The third level houses the large rooftop lounge overlooking the CSU campus, where guests may rendezvous over wine, cocktails, and beer while enjoying the magnificent Colorado outdoors.
Metro’s attention to detail in the kitchen is extremely appealing. With an infusion of New American cuisine using only the freshest ingredients, with creative influences from around the globe, it’s the attention to detail that keeps the guests coming back. The quality and plating of the food is exceptional.
Executive Chef Vincent Vigil and Sous Chef Mac Fischer create exciting seasonal menus and make everything in-house. From the beer braised lamb shank, pan seared Scottish Salmon, smoked eggplant Caponata, grilled kale salad, beet & lemon ricotta, grilled cauliflower to the certified Angus Beef patty, this urban restaurant guarantees their guests will find something for everyone.
They offer vegan, and vegetarian entrees and can adjust for food allergies and dietary restrictions. Kindly discuss your dietary needs with your server. Most of the menu items can be made gluten free upon request and they source their products locally, when possible.
Taking the kids out to eat? Metro is family friendly! There is not a set kids’ menu, however, the chefs will happily prepare a dish from scratch that will meet their preferences and age requirements. It’s almost like having a personal chef!
The one of a kind bar top, made of cold rolled steel which was acid washed and clear coated, features 24 taps, 4-5 rotating and 3 wines on tap. Specialty cocktail selections are graciously created by the bar manager, Jim Leonard and assistant manager, Jake Moore. Summer months offer late night happy hours in addition to the regular happy hour.
